Saperavi
Saperavi is Georgia’s great teinturier red—red flesh and dark skins yield inky colour, black fruit, savoury spice, and firm acid-tannin that define qvevri and conventional table wines alike. It is the backbone of many dry Georgian reds and semi-sweet styles such as Kindzmarauli when residual sugar is retained. The flavour runs dense and food-oriented rather than soft and simple. Cook with dry Saperavi for lamb, beef, and walnut-heavy Georgian-inspired stews; the deep colour and structure stand up to spices and long simmering. Qvevri-influenced bottles can show earthy phenolics—use them in robust braises. Avoid sweet semi-sweet styles for savoury reductions unless the dish wants that profile.
