Rondinella is a Valpolicella blending grape valued for reliable yields, disease resistance, and contribution of red fruit and colour rather than solo aromatic fireworks. It supports Corvina in Valpolicella, Ripasso, and Amarone, helping structure and volume without dominating the blend’s cherry-almond core. Rare as a pure varietal; when available, treat like a medium Valpolicella red for pasta sauces and light meat dishes. In Amarone-style blends, use sparingly in reductions so dried-fruit intensity does not overwhelm the plate.
