Refosco

Refosco covers several related Friulian and Istrian reds (notably Refosco dal Peduncolo Rosso) with deep colour, dark berry, almond bitterness, and firm acid-tannin balance. The wines can be rustic or polished depending on extraction and oak; quality examples are savoury, mineral, and built for food. It is a north-east Italian alternative to international Merlot plantings in Friuli-Venezia Giulia. Use Refosco for braised beef, tripe, and hearty bean soups of Friulian tradition; the slight bitter edge and acid cut fat. Deglaze pans for savoury sauces with herbs and garlic. Avoid over-extracting already tannic bottles in long boils—simmer gently and finish with a fresh splash if needed.
