Primitivo
Primitivo is Puglia’s ripe, sun-soaked red—linked genetically to Zinfandel—with dark berry jam, liquorice, and warm spice, often high in alcohol yet softer in tannin than many northern Italian reds. Manduria and Gioia del Colle mark quality zones; simpler bottles can be plush everyday reds. Use for barbecue-style glazes, lamb with herbs, and rich tomato sauces that welcome sweetness of fruit without residual sugar. Reduce with stock so alcohol does not burn; a pinch of salt and acid keeps sauces savoury.
