Nebbiolo
Nebbiolo is Piedmont’s pale-garnet powerhouse—rose, tar, cherry, and formidable tannin and acid—that ages into leather, truffle, and dried flower complexity in Barolo and Barbaresco. Colour can deceive; structure is serious even when the wine looks translucent in the glass. Match with brasato, truffle pasta, aged cheeses, and rich game. In cooking, Nebbiolo reductions need time and fat (butter, marrow, stock) so tannins do not seize; a young, cheaper Nebbiolo Langhe often cooks better than a trophy Barolo you would rather drink.
