Mourvèdre
Mourvèdre (Monastrell, Mataro) is a late-ripening Mediterranean red—black fruit, game, leather, and firm tannins—that thrives in Bandol, Alicante, Jumilla, and warm New World sites. It often anchors GSM blends with structure and savoury depth rather than simple sweetness. Excellent for long braises, wild game, and Provençal stews with olives and herbs. Give reductions time; Mourvèdre’s tannin needs fat and slow cooking to soften, and underripe bottles can taste meaty-bitter if rushed.
