Molinara
Molinara is a pale, high-acid Veronese blender historically used in Valpolicella for freshness, lift, and lighter colour—sour red berries and a slightly saline, herbal edge. Modern fashion sometimes reduces its share in favour of darker grapes, yet traditionalists value the brightness it brings to blends. As a lighter red component it suits quick deglazes for poultry, mushrooms, and vegetable dishes more than heavy beef braises. When present in Valpolicella bottles, expect a fresher, less extracted sauce base than pure Corvina-heavy styles.
