Mencía
Mencía is the flagship red of Bierzo, Ribeira Sacra, and Valdeorras—aromatic red and black fruit, herbal lift, and slate or schist minerality with medium body and lively acid rather than heavy oak or extract. Atlantic-influenced slopes and old vines give floral, peppery, sometimes Pinot-like elegance when handled gently. It is a modern Iberian favourite for drinkers who want structure without Cabernet weight. In the kitchen, Mencía pairs and cooks with grilled octopus, roast chicken, mushrooms, and lighter pork; deglaze pans for herb-forward sauces rather than long beef reductions. Keep heat moderate so the variety’s perfume and acid remain in the sauce instead of cooking out to generic red-wine base.
