Gamay
Gamay is Beaujolais’s grape—bright cherry and banana-candy notes in carbonic styles, more mineral and floral in cru villages—with low tannin, high drinkability, and a chillable lightness rare among reds. Beyond Beaujolais it appears in the Loire and Switzerland in leaner alpine forms. Perfect for charcuterie, roast chicken, mushroom sautés, and quick pan sauces that should stay fresh. Do not over-reduce; Gamay’s charm is perfume and acid. Use within a short simmer and finish with cold wine for lift.
