Dornfelder is a German-bred red cross valued for deep colour, soft tannin, and dark berry fruit that made quality red wine more accessible in cool German climates. It can be light and fruity or denser with oak; at best it is juicy and structured without the thinness of older bulk German reds. Plantings are strong in Rheinhessen, Pfalz, and other German regions. In the kitchen, Dornfelder works for everyday braises, mushroom sauces, and pork dishes where colour and soft fruit matter more than fierce tannin.
