Dolcetto
Dolcetto is Piedmont’s dark, early-drinking red—despite the “little sweet” name it is usually dry—with black cherry, liquorice, and low acid relative to Barbera, plus a gently bitter almond finish. Alba, Dogliani, and Diano d’Alba zones offer increasing depth without Nebbiolo’s ageing demand. Everyday pasta, boiled meats, and mushroom dishes pair naturally; in the pan Dolcetto gives colour and fruit quickly. Avoid long harsh boils that amplify bitterness; a short reduction finished with stock keeps sauces round.
