Counoise
Counoise is a southern Rhône blending grape—pepper, wild strawberry, and high-toned spice—with relatively soft tannins that lift Châteauneuf-du-Pape and similar blends without adding heavy colour. Rare as a pure varietal, it is prized by producers who want aromatic snap rather than more Grenache weight. When bottled alone or high in the blend, use for lighter lamb dishes, ratatouille, and herb-driven sauces. Keep heat moderate so peppery aromatics do not cook out; it is a seasoning red more than a tannic backbone.
