Castelão
Castelão (also Periquita in older trade) is a widely planted Portuguese red offering raspberry, redcurrant, and light herbal notes with medium body and approachable tannin. It thrives in warm sandy and clay sites of the Setúbal Peninsula and Tejo, yielding everyday table reds and sturdier estate bottlings. Less austere than Baga, it is a workhorse cooking and drinking wine of southern and central Portugal. Use Castelão for tomato-based seafood rice, grilled sardine accompaniments, and simple pork or chicken braises where bright red fruit and moderate tannin help without heavy reduction. Avoid over-boiling young bottles—short deglazes and shallow sauces keep the berry lift that makes the variety useful at the stove.
