Brachetto
Brachetto is a fragrant Italian red grape of Piedmont, best known for lightly sparkling, aromatic wines with strawberry, rose, and raspberry perfume, often residual sugar, and low-to-moderate alcohol. Dry still versions exist but the culinary and market identity is floral, berry-sweet red for dessert and aperitivo. Colour is light ruby; tannin is soft so the wine drinks easy rather than structured. In the kitchen, Brachetto suits fruit sauces for duck or game birds, berry reductions for desserts, and poaching liquid for pears when sweetness is welcome. Avoid using sweet Brachetto in savoury meat braises where dry reds belong; a spoonful of reduced Brachetto can glaze charcuterie or chocolate-adjacent plates instead.
