Bobal
Bobal is a thick-skinned Spanish red native to Utiel-Requena and Manchuela, producing deep-coloured wines with black cherry, liquorice, and rustic tannin, often at moderate alcohol when yields are controlled. Historically a bulk workhorse, it now appears as single-variety reds with genuine structure and fresh acid for the climate. Rosado from Bobal is common, but as a red it sits between everyday table wine and serious regional bottles. Use dry Bobal for stewed lentils, chorizo dishes, and slow-cooked pork where dark fruit and firm tannin support spice without needing expensive Ribera or Rioja. Short reductions and marinades work well; avoid very coarse bulk bottles that can taste green or hollow when boiled hard.
