Agiorgitiko
Agiorgitiko (“St. George’s grape”) is Nemea’s versatile red—plum, red berry, soft spice, and medium tannin with enough flesh to drink young yet enough structure to age in better sites. It produces everything from light rosés and early-drinking reds to dense reserve bottlings from higher vineyards. Compared with Xinomavro it is generally fruitier and less austere. In the kitchen, Agiorgitiko suits pork, grilled lamb chops, and tomato-herb sauces without overwhelming the plate. Deglaze for quick red-wine pan sauces; the plush fruit reduces cleanly. Reserve heavier oak-aged bottles for braises and keep fresher Nemea reds for lighter meat and vegetable cooking.
