Maury
Maury is a Roussillon vin doux naturel from schist valleys inland from the coast, dominated by Grenache Noir under AOC rules. Fortification traps residual sugar; wines may be bottled young for vivid black fruit or aged oxidatively for coffee, cocoa, and dried-fig complexity similar to Banyuls but often denser and more rustic. Maury sec (unfortified dry red) exists separately; classic Maury for this fortified entry is the sweet VDN. Pair Maury with chocolate, black fruit desserts, and strong cheeses. Culinary uses mirror Banyuls: chocolate ganache infusions, game glazes, and prune or fig sauces for pork and duck.
