Jerez Palo Cortado
Jerez Palo Cortado is a rare sherry style that begins with the delicacy of a biological wine and then ages oxidatively like Oloroso, marked historically by a cut chalk stroke (palo cortado) on the butt. The palate combines Amontillado-like elegance with Oloroso richness—citrus oil, walnut, smoke, and long dry length. Production is partly selection-driven: butts that lose flor or show the right intermediate character are destined for this path. Serve as a contemplative dry sherry with consommés, foie, or hard cheeses. In cookery it enriches refined pan sauces for sweetbreads, veal, and mushrooms where you want more complexity than Fino and more lift than heavy Oloroso.
