Jerez Oloroso
Jerez Oloroso is dry sherry aged entirely oxidatively without a lasting flor veil, fortified higher (often near 17–18%) so yeast film cannot dominate. Deep walnut, leather, spice, and dried fruit aromas build over years in solera; body is fuller and warmer than Fino or Amontillado while remaining dry when unsweetened. Sweetened Oloroso-based blends become Cream; pure Oloroso is a savoury powerhouse. Cook with Oloroso in braises, oxtail stews, mushroom ragùs, and rich gravies where its oxidative depth replaces stock concentrate. A classic partner to game and beef; avoid confusing with cream sherry in recipes that specify dry Oloroso.
