Jerez Fino
Jerez Fino is pale, dry sherry aged biologically under a film of flor yeast that protects the wine from heavy oxidation while imparting almond, dough, and saline notes. Fortified to roughly 15% alcohol to support flor, it stays light in body, razor dry, and best served chilled young from the solera. Manzanilla is a closely related Sanlúcar style; Fino is the Jerez and El Puerto archetype of biological ageing. In the kitchen and at table, Fino is the classic dry sherry for olives, almonds, jamón, seafood stews, and clear soups. Deglaze mushroom or shrimp pans with Fino; heat softens flor aromatics, so finish with a fresh splash when possible.
