Jerez Cream
Jerez Cream is sweetened sherry, classically a blend of dry Oloroso (or similar oxidative wine) with Pedro Ximénez or other sweetening wine to a smooth, dessert-leaning profile. Colour is deep mahogany; flavours run to toffee, raisin, coffee, and walnut under residual sugar that softens oxidative edges. British-market Cream styles made the category famous; quality ranges from simple commercial blends to carefully aged house recipes. Drink Cream with Christmas cake, ice cream, and blue cheese. In cooking it glazes ham, sweetens gravy for poultry, and sauces sticky toffee desserts—use less than dry sherry because sugar concentrates fast under heat.
