Blue wildebeest (Connochaetes taurinus), also called the common or brindled gnu, is the widespread southern and East African species whose herds define classic savanna game meat. Muscle is lean, dark, and fine-grained with a clean iron flavour—stronger than farmed beef, milder than old antelope when animals are young and well handled. Ranch and culling programmes supply steaks, stew meat, and biltong-style dried product. Treat like lean venison: hot grill or pan for prime cuts, moist braise for shoulders and shanks. Age carefully if at all; the low fat offers little buffer against drying. Blue wildebeest is the default “wildebeest” on most game menus.
