Black wildebeest (Connochaetes gnou), the white-tailed gnu, is the stockier, more localised South African species with a darker coat, high shoulders, and a distinctive white tail. Meat is lean red game similar to blue wildebeest but often slightly denser in texture from the animal’s compact build and highland-range life. Once near extinction, conservation and ranch herds now supply limited specialty meat. Cook as other lean antelope: rare steaks from the loin, long braises from working muscles, and careful seasoning so the meat’s savoury edge stays clear. Black wildebeest is rarer on export lists than blue, so provenance is part of the story when it appears.
