Japanese wild boar (inoshishi), including the subspecies Sus scrofa leucomystax, inhabit forests and rural edges of Japan and appear in regional cuisine as a winter game meat. Animals raiding crops also enter meat channels through pest control. Inoshishi nabe hot pots, miso braises, and grilled cuts showcase a sweet-game pork flavour distinct from domestic buta. Younger meat is preferred; fat from good animals is valued in cold-season dishes. Supply is seasonal and regional.
