Feral Hog

Feral hogs are free-ranging domestic pig descendants and hybrids that plague parts of the Americas, Australia, and elsewhere. Genetically mixed with wild boar in many regions, they supply a large volume of “wild pig” meat through hunting and trapping programmes. Young sows and shoats make excellent barbecue, chili, and sausage; big boars can be rank and tough. Diet of crops versus mast changes flavour. Process promptly, cook thoroughly, and prefer cold-chain inspected product when available commercially.
