Pacific whiting (Merluccius productus), also Pacific hake, is a high-volume West Coast whitefish with soft, mild flesh used heavily for surimi, frozen blocks, and value fillets. It is not Merlangius European whiting but fills a similar mild whitefish niche at industrial scale. Texture is soft and can be soft-mushy if mishandled. Best in processed forms, gentle bakes, and fishcakes; high-heat grilling is less ideal. Look for well-frozen, low-glaze product. Pacific whiting’s mildness takes spice rubs and assertive sauces without conflict.
