Merlangius merlangus is European whiting—a small, delicate North-East Atlantic gadoid with soft white flakes and a very mild, slightly sweet flavour. It is prized for frying whole or as thin fillets when ultra-fresh; older fish soften quickly. Yield is modest but the eating quality is refined for a cheap fish. Flour and pan-fry, deep-fry, or steam gently. Whiting dries and falls apart if held too long on heat. Classic with lemon, parsley, and tartare; also excellent in light fish soups added at the end.
