Knobbed Whelk
B tier
Knobbed whelk (Busycon carica) is a large American Atlantic conch-like snail with firm sweet meat used in chowders, fritters, and scungilli-style Italian-American dishes. Texture needs pounding or long simmering if thick. Slice thin for salads after cooking, or grind for fritters. Mid-Atlantic and Southern US fisheries land them. Flavour is milder than some Busycon when fresh. Remove the dark digestive parts carefully.
