Common Whelk
A tier
Common whelk is the fishmonger name for Buccinum undatum sold cooked or live in mesh bags. Meat is white-tan, dense, and sweetly saline when not overcooked—excellent pickled, buttered, or in garlic parsley butter after chopping. Extract with a pick after boiling; discard the tough operculum and any grit. British piers and French chophouses both know it. Freshness shows as clean ocean smell without sulphur.
