Triticum durum is tetraploid durum wheat, a hard amber-kernel species with high protein and strong but less extensible gluten than bread wheat, optimised for semolina and pasta rather than high-volume pan loaves. Free-threshing and spring- or winter-sown depending on region, it thrives in Mediterranean and semi-arid climates from Italy and North Africa to the North American plains. Culinary identity is pasta, couscous, bulgur, and frekeh-style products: coarse semolina for extruded and rolled pasta, finer flour for some breads (pane di Altamura, North African flatbreads), and whole berries for salads and soups. Cracked, rolled, soaked, and fermented uses sit alongside classic dry pasta and couscous cookery.
