Triticum aestivum is common bread wheat, a hexaploid species that supplies most of the world’s milling wheat for loaves, cakes, pastries, and noodles. Kernel hardness, protein content, and gluten strength vary widely across winter and spring types and red and white classes, giving millers and bakers a broad quality spectrum from strong bread flours to tender soft wheat. Culinary use centres on flour and milled products: bread and pizza doughs, laminated pastries, cookies, crackers, steamed and boiled noodles, and whole-grain berries for porridge and salad. Bran, germ, and endosperm may be kept whole or separated; cracked, rolled, soaked, and fermented preparations extend the grain beyond straight milling.
