Senatore Cappelli is a tall Italian durum wheat selected by Nazareno Strampelli and named after Senator Raffaele Cappelli, released in the early twentieth century. It became the backbone of Italian pasta and durum bread quality for decades and is now a flagship heritage durum for organic pasta, bronze-die shapes, and artisanal semolina. High protein amber kernels yield flavourful semolina with excellent colour and firm bite. Bakers also use Cappelli for Altamura-style and other southern Italian durum breads; whole berries and cracked durum appear in regional grain dishes.
