Russello is a traditional Sicilian durum landrace with reddish grain and tall straw, historically milled for island breads and pasta. Like Timilia and other native Sicilian wheats, it was sidelined by high-yield modern durum then restored by organic and artisanal producers seeking flavour and local identity. Flour and semolina from Russello suit rustic loaves, frascatole and other regional pastas, and bronze-die dried shapes. The grain’s colour and aroma distinguish it from pale industrial durum lots.
