Kubanka is a historic Russian and North American durum landrace group, associated with the Kuban region and later prairie plantings. It produced amber hard kernels for pasta and coarse cereals and was among the durum types that established New World pasta-wheat production. Semolina and durum flour from Kubanka-type grain suit traditional pasta, kasha-style cracked wheat, and dense durum breads. Heritage collections preserve Kubanka for flavour and genetic diversity in durum breeding.
