Canadian Western Amber Durum (CWAD) is Canada’s principal export durum class: hard amber kernels graded for protein, vitreousness, and milling quality for pasta and couscous. Grown mainly on the southern Prairies, CWAD underpins much of the world’s traded durum supply outside Mediterranean production. Mills convert CWAD into semolina and durum flour for industrial and artisanal pasta. Quality tiers (e.g. No. 1 and No. 2 CWAD) guide buyers on colour, test weight, and defects.
