Canadian Prairie Spring (CPS) is a Canadian market class of medium-protein spring wheat positioned between elite CWRS bread wheat and softer feed or pastry types. It includes red (CPSR) and white (CPSW) subclasses used for noodles, flatbreads, blended bread flours, and general milling. CPS varieties offer useful gluten strength without the full protein premium of top CWRS grades, giving millers flexible, cost-effective grist components. Prairie growers plant CPS where yield and class premiums balance better than pure CWRS contracts.
