Banatka is a historic winter wheat landrace group associated with the Banat region of Central Europe (today spanning parts of Romania, Serbia, and Hungary). Tall, hardy plants and flavourful grain made it a traditional bread wheat before high-yield semi-dwarfs took over; organic and landrace bakers have revived it for aromatic loaves. Flour from Banatka suits country breads, sourdoughs, and blended milling where character outweighs maximum loaf volume. Whole and cracked grain cook as hearty cereal berries.
