Sparkling water is carbonated still water—natural from the spring or injected with CO2—used as a beverage and occasionally in batters for lightness. Bubbles lift aroma; acidity from carbonic acid brightens the palate. Not a substitute for still water in most stocks. Excellent as a table drink and mixer; some bakers use it in tempura-style batters.
