Soft water is low in calcium and magnesium—naturally soft from rain/rock type or softened by ion exchange. Lathers easily; in cooking it can make tea and legumes behave differently than hard water, sometimes extracting more bitterness from tea. Note for bakers and brewers: mineral profile affects dough and mash. Softened water may add sodium.
