European Water Chestnut

European water chestnut (Trapa natans) is a floating aquatic plant with spiny, horned nuts—not the same as Chinese Eleocharis corms. Starchy seeds inside the hard shell were historically eaten in Europe and Asia; invasive status limits modern harvest in many places. Flavour is different and preparation harder. Only use where legal and non-invasive controlled; boil and extract seed. Do not substitute interchangeably with Chinese water chestnut recipes expecting crisp slices. Included for botanical completeness of the name.
