Sander vitreus is walleye—the premier mild freshwater eating fish of the northern US and Canada, with snow-white, fine-flaked, sweet flesh and few troubles once filleted. Texture is delicate-firm; flavour is clean lake sweetness. Pan-fry in butter, shore-lunch bread, or bake gently. Do not overcook. Related to European zander but a New World species with its own cult following. Peak ice-out and summer fisheries define regional food culture.
