Mule deer (Odocoileus hemionus) of western North America yield venison often described as slightly milder and more sagebrush-sweet than some white-tails when animals feed on mountain shrubs and forbs. Large bucks provide substantial loins and roasts for hunting camps and home freezers. Treat like other lean deer: hot sear, gentle finish, or long braise for legs. High-country animals in good condition are prized; late-season thin bucks need more moisture and trim.
