Axis deer or chital (Axis axis) are spotted South Asian deer naturalised in Texas, Hawaii, Australia, and elsewhere, famed among hunters for mild, tender venison that many rank among the best wild deer meats. Year-round breeding in some climates yields various age classes. Flavour is clean and almost beef-like with a light game finish—excellent grilled medium-rare. Free-ranging axis on Texas ranches supply commercial exotic venison under inspection in some programmes. Little fat; do not overcook.
