Dairy-cross veal comes from calves sired by beef bulls over dairy cows—Angus, Belgian Blue, or other terminals on Holstein-type dams—to improve muscling and value of calves that would otherwise be pure dairy. Many progressive dairies use beef semen specifically for this premium stream. Carcasses show better conformation and often richer colour when raised on farm, giving juicier chops and roasts than pure Holstein veal. Flavour leans slightly more toward young beef while staying in the veal age and tenderness window.
