Spice
Tahitian Vanilla
S tier
Tahitian vanilla is the culinary name for carefully cured V. × tahitensis beans from French Polynesia—cherry-blossom, heliotrope, and soft spice perfume in plump dark pods. Production volumes are tiny compared with Madagascar, so prices stay high and counterfeits exist. True Tahitian cure emphasises aromatic top notes over sheer vanillin strength. Finish mango, pineapple, and passion fruit desserts; scent panna cotta; make a floral extract for cocktails. A little goes far. Blending half Tahitian with half Bourbon can bridge traditional bakers toward floral complexity without abandoning familiar structure.
