Tokyo turnips are small, pure white, smooth globes harvested young for crisp, mild, almost apple-like sweetness with only gentle pepper—far refined from large purple-tops. Skin is thin and edible; size is golf-ball to tennis-ball. Japanese market aesthetics shaped the type’s clean look. Eat raw, quick-pickle, or glaze whole. Excellent roasted briefly. Do not grow on to storage size or the point is lost. Greens are tender and mild.
