Hakurei is a Japanese hybrid salad turnip—snow white, flat-globe, exceptionally sweet and juicy raw, with almost no harsh bite when grown cool. It redefined Western chefs’ idea of turnip as a crudo and snack vegetable. Texture is snappy and refined; greens are similarly mild. Slice raw for salads, roast quickly, or butter-glaze. Market bunches sell with tops on. Pull small; heat or age brings ordinary turnip edges back.
