Merriam’s wild turkey (M. g. merriami) is the mountain and ponderosa-pine bird of the Rocky Mountain West, often noted for slightly paler tail tips and a high-country diet. Meat is lean, clean, and intensely savoury—excellent when treated as mountain game rather than farm poultry. Smoke over pine-adjacent fruitwoods where available, confit legs in duck fat, and slice breast thin for sandwiches with sharp cheese and pickles.
