Broad Breasted White

D tier

Broad Breasted White is the dominant commercial turkey of modern supermarkets: a large, white-feathered bird selected for enormous breast yield, rapid growth, and mild flavour. Birds are typically too heavy for natural mating and are raised on controlled diets that prioritise lean white meat volume over the deeper, gamey notes of heritage stock. Roast whole for holidays or break into breast roasts, thighs, and ground meat for everyday use. Breast benefits from brine, butter under the skin, or self-basting injections to offset dryness; dark meat takes longer and rewards lower, slower heat. This is the default turkey of industrial supply—predictable, affordable, and best when not overcooked.

History

US

Breeders began selecting white-feathered, heavy-breasted lines from bronze and white stock for market carcasses.

US

Broad-breasted whites displaced many farm breeds as industrial poultry production scaled for holiday demand.

Artificial insemination and specialised grower programmes locked in the commercial BBW type worldwide.

Heritage alternatives rose in niche markets while BBW remained the global volume standard.
