Southern bluefin (Thunnus maccoyii) ranges the Southern Ocean and supports highly regulated fisheries off Australia and neighbouring waters. Flesh is deep red and can show excellent fat in ranch-fattened fish bound for Japanese and other premium markets. It is a true bluefin, not a marketing synonym for yellowfin. Use for seared loin and raw service when grade and handling allow. Strict catch documentation is normal; illegal product has damaged the fishery before. Cook less rather than more—southern bluefin’s reputation is texture and fat, ruined by grey well-done centres.
